The Deets
This year’s offering from the Chacóns at Las Lajas is what they call Red Honey. Cherries are picked at peak ripeness, floated for sorting, and then pulped, leaving 100% of the sweet mucilage before being transferred to raised beds for drying.
Look for heightened candy-like sweetness, lemon-lime citrus, fresh caramel with notes of concord grape and brown sugar.
