This offering comes from Miriam Monteiro de Aguiar—she produces small lots of high-end specialty coffee with an intense focus on sustainability. Miriam offered us an exclusive single-variety this year. Topazio, a hybrid of Mondo Novo and Ret Catuaí varieties—it is incredibly hearty. Beyond that is its long lifecycle and is extremely uniform in ripe yellow cherries. This is a dense, heavy bodied coffee with a perfect touch of acidity. Chocolate pudding, graham cracker and nougat rounded out with blood orange, vanilla and plum.
