Our weekly special for the week of September 9th is Brazil Fazenda São Domingos - Flavio's Reserve. This special "featured farm" coffee is available in our cafes and online for one week only!Flavio Batista Faria, one of the farm managers at Fazenda São Domingos, is responsible for reserving the top-quality, naturally-processed coffees from the farm and blending them into larger lots depending on the overall quality of the harvest. We are fortunate to have a relationship with the Fazenda that allows us to be able to taste all of these lots before they are blended, and select our favorites to offer as single lots. The coffee was handpicked from Bourbon and Catuai variety trees at the crests of the hills (1,100-1,200 meters above sea level) and sorted according to ripeness. The coffees from the final stage of ripeness (over-ripe, raisiny pods) were then pre-dried on raised Kenyan-style beds - an uncommon practice in Brazil - and transferred to storage to rest until they were ready for final drying, milling, sorting and export. Flavio’s Reserve features a full, sweet, satisfying mouthfeel, subtle notes of cocoa, dried fruit, and pipe tobacco, and is a wonderful expression of the unique flavors that come from this region and this style of processing.
