Notes From The Cupping Room...

Happy 2016! We're finally experiencing winter weather here in Milwaukee, which means our roasting crew is inching a bit closer to the Probats each morning to shake off the chill...on the upswing, it's great coffee-drinking weather!What’s keeping us warm in the cupping lab is a steady flow of pre-shipment and arrival coffee samples. Coffees grown along the Equator and in the southern hemisphere are in late harvest right now, which means we are seeing samples from hundreds of producers. Some good, some great, and some exceptional.In the coming months, look forward to the return of long-time Seasonal favorites such as Peru Chirinos and Rwanda Dukunde Kawa; freshly harvested Session Roasted Coffees that will make up our Brazil Fazenda Sao Domingos, Colombia Paso Fino, and Sumatra Highlands; as well as some new and exciting Featured Farm offerings coming from small farms in South America, Africa, and Indonesia. If that’s not enough to keep us feeling tropical in this blustery weather, then we don’t know what will.Happy New Year from all of us here at Colectivo.
