Our spring menu is here whether the weather feels like it or not!
This year's spring line up really captures the vibrant spring we dream of.
THE DRINKS
This menu's featured seasonal latte is light and just right for spring: Honey Elderflower Latte. A gentle medley of our signature espresso Toro, sweetened with local Kallas honey and elderflower. It's perfect, isn't it?
Spring is the time for light and refreshing flavors, so we brought just that. You can also enjoy a Hibiscus Lemonade this season, it's a hibiscus mango iced tea combined with lemonade. The result is a tart but sweet caffeine free beverage.
Dragonfruit Matcha Spritz
A dragonfruit and coconut soda topped with a matcha cold foam and garnished with dragon fruit powder.

Yuzu Earl Grey Spritz
Earl Grey tea paired with a Yuzu citrus puree and topped with sparkling water to create a sweet and citrusy tea soda
THE EATS

Pictured above is a brand new breakfast burrito for y'all to try! Spring brings us the Cajun Breakfast Burrito, filled with eggs, spicy Andouille sausage, potatoes, peppers, onions, pepper jack cheese and Cajun seasoning—served with our signature house-made salsa.
Alongside it is one of two soups. The one pictured here is the Ethiopian Red Lentil Soup, consisting of red lentils, garlic, ginger, berbere spice, potatoes, spinach and served with toasted house-made sourdough. Try it while it's new (and here)! This soup stays on the spring menu until April 14th.
While the spring menu doesn't end there, we'll be parting ways with this soup and launching another spring soup in its place: Cream of Chicken and Mushroom Soup. Starting April 15th, this comforting cream soup with chicken, mushrooms, fresh herbs and brown rice will be available for all Colectivo fans to try.
THE TREATS
Continuing the trend with a Lemon Poppy Muffin—an unforgettable classic. Moist, spongy and lemony. Garnished with poppy seeds and sparkling sugar.
There's also some savory in the mix too, our Jalapeño Cheese Focaccia is a polenta focaccia filled with cheddar, roasted poblanos and corn. Topped with cheese and jalapeño.
Another treat for y'all is the Peach Cheese Danish, it might sound familiar, because it was such a hit last time. Enjoy all the flaky layers filled with cream cheese and house-made peach ginger compote.
Finishing the treats off for spring is the Cowgirl Crunch Cookie, we had it during the holidays. Didn't have it for winter and we missed it way too much, so now it's back. If you haven't gotten to try this yet, you're missing out. This crunchy cookie is filled with toasty, caramelized cornflakes, marshmallows and semisweet chocolate chips. You'll probably want more than one.
