Letterbox Kombucha offers a refreshing, slightly sweet, tea-forward profile in three flavors: Anthology Blended Black, Bloom Chamomile, and Gala Hibiscus available in all cafes February 1, 2018.Is your kombucha pasteurized?Our kombucha is not pasteurized and thus the cultures (predominantly Acetobacter and Brettanomyces yeast) remain live and active.What makes Letterbox Kombucha less fizzy than other commercially-available brands?Some consumers dislike carbonation and that sets our kombucha apart. Carbonation can cause stomach distention which is a problem for those that drink kombucha as a digestive aid. Ours has no added juice or sugars, which means no secondary bottle fermentation. It's brewed using only traditional methods and retains live, active cultures (probiotics), beneficial acids, antioxidants, & enzymes.What’s that floating in my kombucha?Our kombucha is raw meaning that it has never been pasteurized / heat treated. As a living product, new cultures will continue to form even once bottled. These cultures are harmless and indicate that the beverage is live and rich in probiotics. It's completely edible but if you prefer, please strain.Why do the Bloom and Gala varieties contain caffeine when tea blends don’t?Kombucha is brewed using a starter tea  much like sourdough bread. The starter tea is made from black tea to help fuel the microbes and create a healthy fermentation.  The caffeine content is very low at 5-10 mg per bottle.Is there alcohol in my kombucha?Our kombucha is under the 0.5% abv permitted for non-alcoholic beverages.Drink to your health and please let us know what you think.
